Ingredients
2 1/4 cups flour1/3 cup sugar
1 tablespoon baking powder
2 teaspoons ground ginger
3/4 cup unsalted butter, slightly cool
1/2 cup candied crystallized ginger, chopped
3/4 cup 35% cream
Directions
- Preheat oven to 400º F
- Mix flour, sugar, baking powder and ground ginger. Add and cut in butter.
- Pour the cream in, and mix until just combined.
- Turn onto a floured surface and fold in the crystallized ginger. Don't over mix.
- Divide the dough in half. Pat each half into disk (~ 2cm thick), and divide each disk into 6 wedges.
- Bake on a buttered cookie sheet for ~15 minutes, until lightly golden.
