Ingredients
3 cups flour1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup lightly salted butter, soft (or unsalted butter + pinch of salt)
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
2/3 cup unsweetened cocoa
Directions
- Preheat oven to 350ºF
- In a small bowl, whisk together flour, salt and baking powder.
- In a larger bowl, mix together: butter, sugar, eggs, vanilla and cocoa (sift in the cocoa)
- Gradually add the flour mixture to the wet mixture.
- Wrap in plastic and chill for 1 hour
- Roll out on a floured counter, and cut out cookie shapes. Nibble a leftover bit, 'cause it's yummy.
- Bake on parchment paper for 8-11 minutes (or less!) until edges are firm and centers are soft and puffed.
