Snickerdoodles

This recipe was found, and first tried one fateful night, when I went over to my cousin's apartment to bake late at night, and we discovered that she was rather lacking in ingredients. This was the only cookie recipe we could find that we could make that night. Neither of us had ever made snickerdoodles before in our lives (they're not a very known thing in Canada), but we promptly fell in love, naturally.

Makes 6 dozen. :D

Ingredients

2 3/4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup unsalted butter, room temperature
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract

For coating

1/3 cup sugar
2 teaspoons ground cinnamon
(I nearly wrote ginger instead, aha! Those would have been interesting cookies)

Directions

  1. In a large bowl mix together flour, salt and baking powder.
  2. In a second bowl, beat the butter and sugar until smooth. Add the eggs one at a time.  Then add the vanilla.
  3. Add the flour mixture to the second bowl, and beat until you have a smooth dough. If the dough is soft, cover and refrigerate until firm enough to roll into balls (1-2 hours).
  4. Place over rack to center and preheat to 400ยบ F
  5. Shape dough into 1 inch round balls, then roll in the cinnamon sugar mix on a parchment covered cookie sheet, roughly 2 inches apart, and gently flatten them to ~ 1/2 inch
  6. Bake for 8-10 minutes. Let cool, then inhale them. Yum.
