Brownie Roll-Out Cookies

Ingredients

3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup lightly salted butter, soft (or unsalted butter + pinch of salt)
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla
2/3 cup unsweetened cocoa

Directions

  1. Preheat oven to 350ºF
  2. In a small bowl, whisk together flour, salt and baking powder.
  3. In a larger bowl, mix together: butter, sugar, eggs, vanilla and cocoa (sift in the cocoa)
  4. Gradually add the flour mixture to the wet mixture.
  5. Wrap in plastic and chill for 1 hour
  6. Roll out on a floured counter, and cut out cookie shapes. Nibble a leftover bit, 'cause it's yummy.
  7.  Bake on parchment paper for 8-11 minutes (or less!) until edges are firm and centers are soft and puffed.
