Gaia's spaghetti sauce

Tasty. I think my mom found it online.
This makes A LOT. Generally we make it and freeze a couple of buckets for later. If you just want some for a dinner or two,  you could easily half it.

Ingredients

2 cups diced onion
5 to 8 minced garlic cloves
2 cups diced celery
2 cups diced or shredded carrots
2 cups diced bell peppers

2 lbs minced beef
4x 10oz cans condensed tomato soup
2x 28oz cans of diced tomatoes
2x 5.5oz cans pure tomato paste

4 teaspoons soy sauce
tabasco or cayenne pepper, to taste
4 to 8 bay leaves
2 teaspoons sage
2 teaspoons thyme
1 teaspoon oregano
1/2 teaspoon allspice

Directions

  1. Chop all the vegetables.
  2. Heat a little oil in a large pot over med-high heat and saute the vegetables, starting with the onions and garlic. Add the other vegetables and cook 5-10 minutes, until soft but not browned.
  3. Add some olive oil and brown minced beef (in the same pot) a little at a time, stirring as it cooks.
  4. Add all other ingredients (tomatoes and seasonings). When it comes to a boil, turn the heat down to low, and simmer for 1 1/2 to 2 hours.
