Ingredients
12-14 oz. chocolate (try 8 oz. semi-sweet + 4 oz. dark chocolate chips)2 tablespoons cocoa powder
1 1/2 teaspoons cinnamon
1 teaspoon espresso powder
5 tablespoons flour
5 eggs
1 1/4 cups sugar
1 cup unsalted butter
Directions
- Butter and flour a 10-inch springform or torte pan with removable bottom.
- Preheat oven to 375ºF
- Melt and mix the butter and chocolate together over a double broiler until smooth.
- Beat eggs and sugar until they start to thicken. Add remaining dry ingredients and fold them in.
- Slowly fold in melted choco-butter mixutre.
- Pour into pan and bake for 25-45 minutes. Baking time will vary, so check it with a toothpick regularly after 25 minutes.
- Let cool. Be aware that during cooling the top will crumble inward gently, this is normal. It will stay together, but give a slightly cracked look. My favorite way to decorate it is with sprinkled icing sugar and edible golden dust/glitter ;)
